Beat the Heat: Refreshing Summer Recipes

Hot oven on a hot day? No, thank you!  When dinner duty calls, a refreshing, veggie-filled summer meal should be the answer. Of course, cool and fresh veggies are waiting for you at Souplantation/Sweet Tomatoes (in addition to yummy muffins and no clean up!). But, on those days when you want to whip up something light, filling, and refreshing at home, try one of these recipes we handpicked from Pinterest – a few even from our own kitchen!

Strawberry Fields Salad

One of our – and your –  favorite Souplantation/ Sweet Tomatoes dishes, the Strawberry Fields Salad with Caramelized Walnuts is the perfect sweet, summer staple. The fresh mix of greens, strawberries, and candied walnuts creates an easy summer meal or the perfect addition to any main course.



 

Spicy Cucumber Watermelon Salad

This is not your everyday watermelon side dish. Kitchy Kitchen’s recipe adds cucumbers and Sriracha sauce that give the fruit an extra flavor kick. Serve alone or with your favorite summer entrée. Although this is not a completely cold dish, we still think that this Souplantation/Sweet Tomatoes’ fan favorite is perfect to enjoy on a cool summer evening! The light, flavorful Asian Ginger Broth recipeis the perfect side, but the various optional savory toppings can make it a meal in itself!
