August Recipe

Calling all vegetarians! This is by-far one of our most popular soups during the year. Our Asian Ginger Broth is a great, light soup that can be created to your likings with all the veggie toppings and any add-ons you want to include.

We offer sliced green onions, shredded carrots, chopped spinach, sliced mushrooms, wonton Strips and cubed tofu at our soup bar to mix in with the broth. Tell us what your favorite combination is.

Asian Ginger Broth

4 Tablespoons finely minced ginger

3 tablespoons finely minced garlic

2 Tablespoons canola oil

Combine ingredients in a pot and sauté for 5 minutes


6 Tablespoons corn starch

2 cups cold water

Combine ingredients and whisk to dissolve

14 cups water

6 Tablespoons Vegetarian base

(* Vegetarian base – we use Custom brand vegetarian base powder. Substitute with a similar base.)

corn starch mixture

Add ingredients to pot and bring to a boil. Simmer for 15 minutes. Season to taste with salt and pepper.

  5. This recipe is very similar to a ginger broth I had in the Philippines recently. I used your recipe and combined the flavors I remember with it, using chicken stock instead of veg stock, adding onion, cabbage and boneless country style pork spare ribs. Thanks for reminding me how wonderfully simple this is!

  6. I would also like to say thanks for sharing this recipe. I love your tour around the world but Asia is always my favorite stop because of this soup. I actually get a second serving of soup for dessert instead of dessert (which is saying a lot for me!). Can’t wait to make it. Now …to Greece, yum!

  7. Most of your soups are ruined with animal broth or pieces of pigs or chickens. Sad! More vegetarian soups would be great!

  8. When I know that the Asian Ginger Broth is available, I take a second plate when I go through the salad bar line and take what I like to put into it the broth. I get all the normal offerings, like carrot shreds, spinach, sliced mushrooms, and wonton strips, as well as green cabbage shreds. I get the tofu when I get a bowlful of the broth, and two bowls. I divide the broth and veggies from the salad bar between the two bowls and save myself a trip back to the soup bar. I cannot wait to make the Asian Ginger Broth a regular thing I make at home!

  10. It love this broth. Normally. Normally I love Sweet Tomatoes very very much. I love the offerings you have for vegetarians. But last night, I was enjoying your Asian Ginger broth – my favourite – and there was a piece of chicken in it.

    The cook probably stirred the soup with the same spoon as he used for the chicken soup. This not only made me throw up my meal, it made me not trust your soups anymore for promises of being vegetarian.

  12. I had my first experience at a Sweet Tomatoes and this is one of the highlights. We came before a cake tasting to enjoy a light meal and talk about the wedding plans.   14. Yesterday, I was taken to Soup Plantation for a birthday lunch. There I saw the Asian Ginger Broth for the first time. Had a small bowl; went back and had another bowl. When my husband came home, I asked if he’d eaten. Noooo! So! Back to Soup Plantation for a (for me) small salad and two more bowls of broth! Thank you for sharing the recipe!!! I’m soooo happy!

I don’t know if I need the recipe but just in case I get hungry for this soup and it is not on your menu I will be satisfied in my own version. I always love going to Soup Plantation and tasting the theme offerings of the month. My husband eats only the chili after the salad. He loves that it is always the same. Thank you again. Camille

  17. wow we loved this soup it was incredible had our first experience with it is Florida… Out of curiosity would you guys ever consider a sweet tomato or soup plantation chain in Holland, MI? you would make a killing here with a place like that especially if it were somewhere close to the hospital … yummmy!

  20. Love the Asian ginger broth – my favorite of all your soups. Wish you offered it all the time.
    I added grated carrots, baby spinach, tofu, asian fried noodles, and seasoned croutons. I’m only an 88 pound woman but managed to eat two bowls of it, along with my salad and baked potato. Please offer it all the time. It’s fantastic.

It is great to be able to eat something until I am totally satisfied without worrying about the calories. My kids like it too.   29. Not knowing what is in your vegetarian base, I would like to know if this soup is vegan. I like that you label soups as vegetarian or non-vegetarian, but it would be very nice to know if any of them are vegan. I won’t try them without knowing…and some of them look very delicious!

  30. I was also wondering if this soup is vegan. What is in the “custom brand vegetarian base powder”? My family loves this broth, and I would like to be able to enjoy it with them. This is a very simple broth that really should be vegan if it is not.

  31. I have just relocated here from Japan and this Asian ginger broth is wonderful! I am not vegetarian but didn’t know if Sweet Tomato’s version was Vegetarian or not? I wonder if the chicken broth would take away from the soup?

  32. I love the asian ginger broth!!!!!!! It is by far my favorite soup ever. Its disappointing that it is not offered more often. I understand rotation, but I feel like it should be one of your staple soups, or at least offered every 2-3 months. I would really love to be able to enjoy it more often. I know a lot of other people who love this soup as well and would like to see it more often. PLEASE PLEASE PLEASE serve this soup more often.   36. I just got finished making this and it tastes exactly like souplantations except there broth is more clear and mine was super foggy (I used liquid vegetable base) but its super delicious!! I like mine with shredded carrots spinach and mini tofu chunks :]] very pleased

    I have tried making this soup three times. I have tried it with a veggie soup base from Winco, with boxed vegetarian both, and with home made chicken broth. NEVER did it taste like your soup. I just went back this week for another taste–your soup is sweeter and lighter. I think it must be the soup base that makes the difference. I sent a couple of friends to try it–they often can top my knowledge in cooking. One thinks there must be some kind of dashi in it. Please help me figure out what base to use.

    1. Hi Ruth – We use Custom brand base. You can sometimes find this ingredient online or you may be able to recreate the taste from their ingredients. Good luck!

  40. I just tried this broth yesterday for the first time. I love ginger flavored things and I was floored. Probably the best thing I have ever eaten at Sweet Tomatoes. I mixed in scallions, rice and carrot. I’m going to try to make this recipe myself at home because I think this might be perfect for fall/winter and anytime one of my family has a cold. LOVE it!!

  41. Hi, this soup made me go to Sweet Tomatoes for lunch every single day. In fact today which is Saturday and the last day will go there to enjoy this soup. Years ago, I was introduced to this soup in Atlanta in a Thai restaurant which had the same effect on me, it made me go for lunch and/or dinner every single day while been there for a class.

    1. Recipe calls for a total of 16 cups of water. (2 cups + 14 cups)

      4 cups = 1 quart
      4 quarts = 1 gallon
      Therefore, the above recipe would make 1 gallon of soup.

  42. Why not make the asian broth soup vegan? This would give other options for vegans besides the salad, few soups in Souplantation are vegan. Making a small change ,just by deleting the milk powder, would be greatly appreciate by your vegan customers . The milk probably does not add much to the flavor of the broth, but deleting it would add more happy customers to Souplantation.

  44. I had this broth last night at Sweet Tomatoes. So very refreshing. Wish they served it at every meal. This will be on my weekly menu! But i will enjoy having it out again at ST soon!
