  1. Which of the cheeses that you use contain animal rennet, which ones contain microbial rennet, and which ones contain vegetable rennet. It isn’t written in the binder. Please let me know, thank you.

      The cheeses that contain animal rennet are the following:

      – Romano
      – Feta
      – Cheese Mix for Mac & Cheese
      – Blue Cheese
      – Parmesan

      Our everyday menu items that contain these cheeses are the following:

      – Caesar Asiago (this is not Vegetarian – contains Fish)
      – Housemade Italian Vinaigrette w/ Basil & Romano Cheese
      – Macaroni & Cheese
      – Quattro Formaggio Focaccia
      – Seasoned Croutons
      – Parmesan Peppercorn Parsley Sprinkle (on salad bar in some locations)
      – Parmesan Shaker (at pasta bar)
      – Feta Cheese (on salad bar in some locations)
      – Blue Cheese Dressing
      – Blue Cheese Crumbles (on the salad bar in some locations)

      The cheeses that contain microbial (vegetarian) rennet are the following:

      – Theil Cheese (for the Mac & Cheese base)
      – Cheddar Cheese
      – Mozzarella Cheese
      – Asiago Cheese

      Our everyday menu items that contain these cheeses are the following (that do not contain any of the other animal rennet cheeses):

      – Shredded cheddar on the soup & salad bars

  2. the red chili garlic lime noodle salad looked Gluten Free , but was not marked GF. can you tell me the ingredients, or even the recipe. Maybe I can make it GF
