JULY RECIPE

Our Summer Tropics menu at Souplantation and Sweet Tomatoes during July is full of light, flavorful, tropical, exotic, tasty menu items that are perfect for a warm summer night. Our Crunchy Island Pineapple salad is our most exotic salad of the year!. Filled with pineapples, carrots and our very own delicious Pineapple Vinaigrette. Make our very own, your very own, by preparing this tossed salad at your house! A true summer salad for the perfect summer season.

PINEAPPLE COCONUT SLAW

BEGIN WITH:

20 oz. can pineapple chunks

Drain pineapple juice and save for the dressing.

DRESSING:

1 ¾ cup salad dressing (Available at your grocery store – try Best Foods or Hellmann) *Don’t use mayo or miracle whip

1 ½ tbsp. pineapple juice (from pineapple chunks)

2 ½ tsp. white sugar

In a mixing bowl, combine the salad dressing, pineapple juice and white sugar. Thoroughly whisk to combine.

ASSEMBLY:

16 c. of sliced green cabbage

2 ¼ c. shredded coconut

Pineapple chunks

Dressing

Slice the green cabbage into small pieces. In a large mixing bowl, combine the green cabbage, coconut, pineapple chunks and dressing. Thoroughly mix until all cabbage is coated with dressing. Allow to chill in refrigerator for the best flavor.

  3. Was hoping to find the recipe for crunchy island pineapple salad but this is for the slaw instead. Are you going to post the recipe for the crunchy island one?

  4. I just tried this the other day at Sweet Tomatoes! Loved it. I’m usually not a fan of coleslaw (there has only been one other time someone made it taste amazing); this will be my staple slaw now for picnics, etc.
    Thanks for posting this too! I just Googled it, hoping someone would have made it as close as you did, but thankfully you were kind enough to share it! I really appreciate that, and now look forward to finding another recipe on here that I tried back in the summer.
