Summer Lemon with Spiced Pecans Tossed Salad

Our most popular lemon dish – Summer Lemon with Spiced Pecans Tossed Salad – will disappear at the end of April, but never fear you can enjoy it all year long with this simple recipe.

Dressing- Yields 5 cups

  • 3 cups Mayonnaise- whole egg
  • 2 cups Lemonade Concentrate
  • 2 ½ TBLS Dijon Mustard

Combine ingredients and whisk until smooth. Season to taste with sugar.

Spiced Pecans

  • 1 ¼ cups ¼” Diced Pecans
  • ¼ lb Butter or margarine
  • 2 TBLS White Sugar
  • ¾ tsp Ground Cumin
  • ½ tsp Table Salt
  • 1/8 tsp Cayenne Pepper

Melt butter in pan. Add sugar, cumin, salt, cayenne pepper. Heat until bubbling and sugar dissolves. Immediately add pecans and stir to coat. Spread pecans on baking sheet and bake at 350 degrees until brown and toasted.

Salad

  • 4 cups Chopped Romaine
  • 2 cups Spring Mix Lettuce
  • ½ cup Spiced Pecans
  • ½ cup Blue Cheese Crumbles
  • ½ cup Diced Craisins
  • ½ cup Lemon Vinaigrette

Combine ingredients and toss and ENJOY!!

  1. Wow – we had a Wedding Rehearsal at Sweet Tomatoes last weekend and everything was amazing – but this – by FAR – was my favorite! So – I am wondering how many this recipe serves!? (Because it sounds like it will serve just me!?) YUM! I can’t wait to try it at home!

  2. This is my all time favorite salad. When Soup Plantation has their lemon month, I go at least once a week, sometimes buying some to take home as well. My second favorite item that month is the lemon lava cake.

  4. I’m a senior citizen in my late 70’s and consequently I don’t get out much anymore. In April my niece and grand-niece took me to Sweet Tomatos for lunch. For the first time in a long time I cleaned my plate completely. They were shocked! My grand-niece got a small side of the creamy lemon w/capers pasta and after one taste of it I immediately send her back to get a side of it for me. It was so delicious that I even had another side of it for my desert. I so want the recipe. I’m even worrying that I won’t get back to have it again if it is repeated next year. Would you please, please publish the recipe?

  5. Do you use frozen lemonade concentrate? or is it liquid lemonade? I am not sure what lemonade concentrate to use with the mayo?

  9. Please clarify the lemonade ingredient for the vinagrette. When you say LEMONADE concentrate I think frozen lemonde you mix w/ water. Do you mean this or lemon concentrate in a jar or plastic lemon….

  10. I made this for dinner tonight and used the frozen lemonade concentrate. It was perfect. I cut the mayo by a half cup and added a little extra Dijon. Yum!

  13. This is by far my favorite salad and I usually buy a container of the dressing by the end of lemon month. Now I can have it year round, thank you. So many like it I was hoping that we could have it more often during the year. Florida is the ideal place as we have so many warmer months.

  14. Dined at Souplantation over the weekend and tried the Summer Lemon with spiced pecans tossed salad, as well as their creamy lemon pasta with capers. Both dishes were very refreshing and tasty. I tend to cook fine cuisine dishes and my friends consider me a pretty decent cook and always tell me that I should open my own restaurant. I do appreciate their flattery, but who wants to go back to work. I’m retired. I thought the two lemon dishes I mentioned were excellent, so I found the recipes on line and I will plan to make these dishes for my next ladies luncheon and perhaps find a lemon type of dessert to go along with to make a a lemon theme luncheon. I now find this lemon salad is now my favorite at Souplantation. Yummy!

  17. WENT TO SOUPLANTATION ON EASTER AFTER CHURCH AND HAD THE LEMON SALAD. IT WAS AMAZING. THE TASTE HAD SUMMER WRITTEN ALL OVER IT. I DO HOPE THEY’LL BRING IT BACK FOR SUMMER. I LOVE THE TASTE OF LEMON!

  18. I, too, would like better clarification of the “lemonade concentrate” called for in this recipe. This is my sister’s favorite dressing. The town where she lives doesn’t have a Sweet Tomatoes. I wanted to buy her some of the dressing to take to her, but by the time I got there the special was over. :0( Thus…I thought I’d make it.
    Is it frozen concentrate diluted with the recommended amount of water?

    1. When you say “lemonade concentrate”, do you mean reconstituted/diluted?”
      2 cups is a LOT of frozen “lemonade concentrate.”
      Please clarify for us…. again. 🙂

      1. Chef Mike said that you should use the frozen lemon concentrate, the one found in the freezer aisle, not the reconstituted/ diluted lemon juice.

  20. I tried to make this last year – looked all over for mayo that was whole egg. Never found it. (What I made didn’t taste the same – I see now I used liquid lemonade as well.) Can you explain further about whole egg mayo? We don’t get to Florida anymore and you don’t have stores in Ohio.

  21. I’m a Type 1 Diabetic and recently had your sugar free mousse. Wow! I would love to have the recipe to serve to my Bunco club to prove that you can have a great tasting dessert without so much sugar.
